Check out my pancake recipe. One of my favourite days of the year is pancake day. I love the simplicity of a pancake and the fact that there are numerous ways to pimp up and serve a pancake. It can be enjoyed both sweet & savoury. Across the world there are so many interesting variations of pancakes from a French crepe to an Indian Dosa.
Pancake day/Shrove Tuesday is largely about feasting before lent. Originally on pancake day, people were meant to empty their pantries of all rich foods before 40 days of lent. In this modern age of more sustainable living, I’d love to see pancake day as a day to promote zero waste living.
I have always preferred the large thin crepe style of pancake over the small thick American style ones. I like that they are lighter to eat and that you can put fillings inside. See here my favourite go-to pancake recipe from BBC Good Food.
Pancake Recipe Ingredients
I have a simple recipe of;
- 2x Large Eggs
- 100g Plain Flour
- 300ml Milk
- 1tbsp Vegetable Oil
I simply whisk all the ingredients in a bowl before leaving for 30 mins to settle. I then heat up a large frying pan and then ladle the mix in making sure to move the pan around to fully cover the base – to ensure no holes in my pancakes. It takes 1-2 mins to cook on one side before I flip it and cook on the reverse. You should be able to make up to 12 pancakes with this recipe.

I have such a sweet tooth so all my favourite toppings are sweet ones. I do also love a good cheese and ham crepe.
